Houston's Sidebar is the Main Story

When out at a bar, the number of drinks you consume is the dependent variable. There are a lot of factors that go into that quantity.
Sometimes, your friend is nursing a broken heart and that increases the amount of wine ordered. When the man with overlong fingernails starts chatting you up, you book it after one beer. Other times, the cocktails are just so delicious — as they are at Sidebar — you order another couples of rounds.
Despite its pocket size, Sidebar shouldn’t be dismissed as a mere waiting area to get into papa restaurant Gravitas. It has its own separate space and warrants a separate visit.
Sink into the deep leather seating and admire the exposed brick, flickering candles and artwork that is almost as striking as the people in the bar. These people are the only living souls on the planet who actually prefer valet parking. You’ll stick around for another drink just for them.
As for the beverages, they’re some of the best in the city. The Texas mojito, a mixture of rum, ginger beer, mint and sugar, is given the perfect amount of kick from a slip of habanero syrup. The honey aftertaste of the gin cocktail the Bee’s Knees is so luscious, you order another one.
Then have a Gravitas burger topped with a fried egg and aged cheddar, which is only $8 during happy hour. The independent variables, the reasons why we drink, are very good here.
What, when, where and why we drink are adjusted based on our lives in general. There are causes to celebrate, grounds to commiserate. But somehow, especially in a setting like Sidebar, the answer always seems to be to drink.
